Are you an experienced food service professional ready to apply your skills in a large volume cooking operation? Then bring your culinary expertise to the Central North Correctional Centre.
• assist in a cook-chill/rethermalization operation;
• assist in the production of the proper amount of food trays;
• ensure that food services equipment and supplies are used and stored in a safe and efficient manner;
• ensure that cleanliness, safety and security are maintained;
• and assist in orienting, instructing and supervising inmate helpers.
Please note: This position supervises inmate helpers for the majority of working time and the salary note for Custodial Responsibility Allowance applies.

• Knowledge of portion control standards;
• Knowledge of restricted diet requirements;
• Knowledge of the proper use of kitchen equipment and tools and of food safety practices acquired through recognized programs (e.g., Canadian Food Safety certification or Servesafe and Food Safety Training certificate);
• Knowledge of relevant legislation to ensure compliance with standards of food preparation and storage (e.g. workplace Hazardous Materials Information System, Hazard Analysis Critical Control Point Program, Public Health Act) to ensure proper equipment operation/utilization and maintain the safety & security of the kitchen facility;
• Knowledge of/ability to acquire institutional security practices/procedures;
• you have written communication skills to prepare reports on inmate behaviour and performance;
• you have analytical skills to observe and report any issues in food quality and ability to take appropriate action to replenish supplies;

Technical Experience and Knowledge:
