DESCRIPTION
SOUS CHEF (V-GAMA)

 Qualification and Experience:

• At least a Bachelors Degree in International Cuisine
• At least three (3) years’ experience as a sous Chef
• Quantity Cooking/Food production as it relates to 5th range
• Ability to keep track of and report on activity
• Outstanding organizational and leadership abilities
• Excellent communication and interpersonal skills
• Fluent in English

Main Responsibilities:

• Assist with maintaining and control food costs
• Train kitchen staff to ensure food is prepared according to budget and standards
• Plan menus and create new recipes
• Create and cost recipes within budget
• Perform inventory checks
• Oversee assigned culinary operation
• Assist with monitoring HACCP and CRISTAL standards
• Ensure that assigned area adhere to sanitation and safety laws
• Prepare operational reports
• Manage food preparation and cooking by ensuring that food standards are met
• Buffet presentation and large volume food production
